🐣 Eggcellent news: Proud to bake with eggs from The Olive Egg! Happy pasture raised hens. Gorgoues eggs! 🐣

Proud to bake with eggs from The Olive Egg at Yellow Barn Farm
The Olive Egg at Yellow Barn Farm was founded by Bella Delaney, whose mission is to provide the community with stunning rainbow eggs from regeneratively raised, seasonally pastured hens. When not foraging for bugs and grasses, Bella's hens are fed a corn-free, soy-free, non-GMO diet. The beauty of a multi-colored dozen begs one to pause and admire nature’s art, bringing mindfulness to our consumption. And yes, the eggs actually look this gorgeous! We are proud to use The Olive Eggs for our Hävenly Mini Power Muffins.

Sharing the best Vegetable Broth Recipe you'll ever taste!
I'm so excited to share this recipe with you. It's easy to make and you can use your vegetable food scraps. The inspiration for making my own broth came from The Minimalist Baker who shared how to make a rich, delicious vegetable broth using vegetable scraps including garlic and onion skins collected throughout the week. I also love that I can add parsley stems and herbs that have seen better days. I can only say what the Minimalist Baker said "BRILLIANT! Why had no one told me this before?"

Since I discovered this recipe, I keep in my freezer a bag of vegetable scraps, carrot peels, onion and garlic skins, greens, and herbs on their last legs. When the bag is full, I know it's broth time. In addition to the vegetable scraps, I add onion, garlic, celery, carrots, and some herbs and let it all simmer for a really long time (but one hour is enough). This recipe is super quick since it only calls for coarsely cut veggies with peels in addition to your veggie scraps. The magic ingredients for that rich, incredible flavor? Some nutritional yeast and tomato paste. Check out this recipe:

Ingredients
You can use just the ingredients listed below, or add your frozen vegetable scraps. It's not a precise science, so you can reduce the veggies below depending on what's in your veggie scrap bag.  The more veggies the better! The veggie scraps can be added from frozen.

  • 1 tbs or more of your favorite oil

  • 1 medium onion (with skins / coarsely chopped)

  • 1 garlic bulb (with skins / coarsely chopped)

  • 4 medium carrots (with skins / coarsely chopped)

  • 4 stalks of celery (coarsely chopped)

  • 1-2 tsp each sea salt and black pepper (plus more to taste)

  • 9-10 cups filtered water

  • 1 cup chopped sturdy greens (kale, collards, etc.)

  • Fresh or dried herbs to your liking: parsley, rosemary, thyme, sage

  • 2 whole bay leaves

  • 4-5 Tbsp nutritional yeast

  • 4-5 Tbsp tomato paste (if you can't eat tomatoes try omitting or add some coconut aminos)

  • salt and pepper to taste

Instructions
1. Heat oil in a large pot. Once hot, add onion, garlic, celery, carrots, and any other hearty vegetables you have (like root vegetables). Add salt and pepper. Saute for 5-10 minutes.
2. Add water, veggie scraps, any greens, bay leaves, and herbs. Bring to a boil and then reduce to a simmer. Add tomato paste and nutritional yeast. Let simmer for at least one hour (the longer the deeper flavor!).
3. Let cool slightly before pouring over a strainer into another pot. For more broth, take the strained vegetables and put them in a clean kitchen towel. Wrench out the liquid. It's a little more work, but you'll get an extra 15-20% broth!
4. Taste the broth and add more salt, pepper, nutritional yeast, and herbs to your liking. Divide into storage vessels and store for about 5 days in the refrigerator or a month in the freezer. Perfect to sip as is, or to use as a base for your soups.

Enjoy!

Happy Healthy New Year! Sharing delicious Vegan Miso Soup Recipe! Inbox

New Healthy Year with delicious Vegan Miso Soup!
Happy New Year dear all. We wish each and every one of you a healthy, happy and joyous 2023!

For us, New Year’s Eve will always be special because that’s when our oldest daughter was born. Due to the 8-hour time difference between Colorado and Sweden, we got to celebrate her birth on December 31st, but her grandparents had to wait until January 1st to celebrate their grandchild.  It has become a family tradition to celebrate our daughter by gathering around the table and making sushi with friends. This year we decided to serve a vegetarian miso soup and I thought you might like the recipe below. It's quick, super yummy, and nurturing.

VEGAN MISO SOUP RECIPE
6 simple ingredients – add shiitake mushrooms for extra flavor!

Ingredients for 4 servings

  • 1 Kombu sheet (edible kelp). 4" x 4", 10 x 10 cm; add more for stronger flavor

  • 5-10 small dried shiitake mushrooms (can be omitted)

  • 4-6 tbs Miso

  • Tofu (medium-firm or silken)

  • 2 tbs Wakame (dried seaweed), or more

  • 1-2 green onions/scallions, cut into small pieces

Instructions

A. Make the Kombu Dashi (Japanese stock made from kelp seaweed)
1. Put the kombu sheet in 4 cups of water and let steep for 20 minutes, or as long as you can (maximum overnight).
2. Put the dried shiitake mushrooms in a small bowl and cover them with hot water. Tip: Place a small plate over the mushrooms to weigh them down.  Let sit for 15-20 minutes.
3. Transfer the kombu sheet with water and shiitake mushrooms with water to a small pot. Bring to a near-boiling point and let simmer for 10 minutes (don’t let it boil).
4. Remove the kombu from the water (munch on it or compost it)
5. Take out the shiitake mushrooms and slice them thinly. Put them back into the dashi.

B. Finish miso soup and garnish
6. Turn off the heat – never boil miso soup! Take some dashi broth in a ladle or small bowl and dissolve the miso using chopsticks or a whisk. Pour into soup and repeat until miso paste is dissolved. As a general rule use 1 tbs of miso per serving. Taste and add more miso as needed.
7. Rehydrate the wakame seaweed by placing it in a small bowl with cold water for a few minutes. Move the seaweed to the soup.
Add cut tofu and green onions.
8. Heat up soup (don’t let it boil) and enjoy!

Sharing our Favorite Swedish Paleo "Semmeltårta" Recipe!
December is a crazy time of year for most of us. Our family tries to juggle three family birthdays with the December madness. So we need a super quick and delicious cake that we can whip up in no-time. You can also make this cake up to a week in advance (store it in the refrigerator).  It's moist and absolutely phenomenal even without any cream. Original recipe modified from recepten.se.

What's a "Semla" you might wonder?

The semla – a small, wheat flour bun, flavored with cardamom and filled with almond paste and whipped cream – has become something of a carb-packed icon in Sweden. For those of us who avoid gluten (or for anyone that wants a healthier and most delicious take on the traditional Semla), this is your cake. With almond flour and cardamom it hits the spot. In my humble opinion, this cake is perfect all year round! I have not tried to bake this cake with an egg substitute, but I think it would work just fine. Let me know if you try it out!

Paleo friendly Semmeltårta Recipe

Ingredients
- 150 g vegan or regular butter
- 3 eggs
- 3/4 cup (2 dl) coconut sugar
-  2 cups (200 g) almond flour (plus a little extra for dusting the form)
- 1 tsp vanilla extract
- 2.5 tsp cardamom
- A pinch of salt

Can be served with whipped cream or whipped coconut cream, or just as is!

Instructions
1. Grease a 9" spring form and dust with almond flour.
2. Melt the (vegan) butter
3. Add the remaining ingredients to the melted butter (eggs, coconut sugar, almond flour, vanilla, cardamom and salt). Mix until you get an even batter.
4. Pour the batter into the spring form. Bake at 350F for about 15-20 minutes. (Gently shake the spring form. If the cake is a bit wobbly in the middle, but firm on the sides, you'll get the perfect gooey consistency!)

Let the cake cool off, and enjoy it with or without cream!

A Place of Gathering with a Fascinating History - East Simpson Coffee Co! 💖

East Simpson Coffee Co has a fascinating history!

East Simpson Coffee - Your Home away from Home!
The moment we set foot in this beautiful historical building, we felt at home. Our girls loved to hang out upstairs reading while enjoying a treat from Leslie and her amazing staff. This is truly a special place and we are delighted to announce that you can now enjoy Hãvenly's Morning Raisin Oat Buns and Rustic Loaves with your order, and buy some of our bake-at-home bread mixes. And please check out East Simpson's event calendar for musical Thursdays and other events.

Fun and fascinating history: East Simpson is the street that was home to one of Colorado’s largest coal mines and commercial businesses in Lafayette, Colorado. The bustling four blocks of downtown suffered two major fires and eventually outgrew its streets. With downtown relocating west onto Public Street, the surviving dozen or so buildings on East Simpson would stand dormant for the next several decades. Immediately upon moving to this wonderful neighborhood, Leslie, Bill and their two daughters knew they wanted to be a part of the reenergizing of Historic Old Town Lafayette, and they opened East Simpson Coffee Co in 2014. Six years later they learned that the former home of Lafayette’s historic City Hall was available for rent. The former City Hall that had doubled as a fire station with horse-drawn fire trucks was now an office building. Under the guidance of Bill, an experienced stage builder, the family spent many hours transforming 201 E. Simpson St. into the beautiful cafe and gathering place you'll find today! When you visit, don't forget to check out the window in the bathroom, it has the original bars from Lafayette's first jail cell.
