Festive Green Pea Soup with Champagne to welcome the New Year!
- Crème Ninon with Rustic Baguette-
Our time in Sweden has been wonderful and calm with friends and family. Lots of short walks to get some daylight and evenings with candles and tea. Now we are preparing for New Year's Eve, which is a big celebration in Sweden. We meet with friends, dress up, and eat an elaborate meal. We are responsible for the appetizers and first course, and will bring warm goat cheese canapes with homemade cloudberry jam, and a "Crème Ninon" - green pea soup with champagne. Scroll down for the recipe of this classic Swedish Crème Ninon, a luxurious soup often served at celebrations. Easy to make, GF, and festive. Can be made vegan! Serve with toasted Hävenly Rustic Baguette. We will bake the Rustic Baguette and other Rustic products this Wednesday, 12/31. Be sure to place your order online by Tuesday, 4 pm, for Wednesday pickup.

Crème Ninon Soup Recipe
Ingredients (for 4-6 p)
Yellow onion: 1 small, finely chopped
Garlic: 2 cloves, crushed or chopped
Vegetable Broth: About 3 cups
Green Peas (frozen): 1 lb (about 500g)
Champagne: About 3.5 oz (1 dl) — Use a dry or extra dry (Brut) for the best balance.
Butter or Olive Oil: for sautéing
Salt & Pepper: to taste
Fresh Herbs: Parsley, mint, or basil for garnish
Heavy Cream (Optional): About 3.5 ounces (1dl)
Instructions
Melt the butter or heat the olive oil in a saucepan over medium heat. Sauté the chopped onion until soft and translucent (do not let it brown). Add the crushed/chopped garlic and sauté for another minute.
Add the frozen green peas to the pan and stir them with the onions and garlic for about 2 minutes.
Pour in the vegetable broth and bring to a boil. Lower the heat and let it simmer for 10–15 minutes until the peas are completely soft.
Use an immersion blender (or a regular blender) to process the soup until completely smooth. If you prefer a thinner consistency, add a little more broth or water.
Once smooth and at the desired thickness, pour in the champagne. Return the pan to the heat briefly just to warm it through (do not boil off all the bubbles). Season with salt and pepper to taste.
Serve: Ladle the soup into bowls. For extra richness, you can stir in or top with a swirl of heavy cream. Garnish with fresh parsley, basil, or mint.

We just arrived in Sweden and surprised my sister on her birthday. What a true joy it is to be with family. Yesterday, we celebrated the 8th night of Hanukkah, and on Wednesday, we will all gather to celebrate Christmas "the Swedish way". I brought my sister, who is also gluten-free, some Hävenly baked goods as well as some homemade Swedish Gingerbread cookies "pepparkakor". She couldn't believe that the Gingerbread cookies were gluten-free and Paleo-friendly! She asked me for the recipe, and I thought I'd share it with you as well. I actually believe they are better-tasting than regular gluten-free gingerbread cookies! Scroll down for the recipe. They are so fun to bake.

Swedish Holiday Market (Denver)
This will be our 4th year attending the Swedish Holiday Market, and we know it is a fun event for the whole family! This market is so special and truly stands out from most other holiday markets. This year, we are bringing some of our delicious Swedish Cinnamon Rolls. The market is arranged by the Swedish women's organization SWEA, and Hävenly is proud to be part of this lovely event. Highlights include Lucia procession, the SWEA Choir, visits from Jultomten/Santa,
and the SWEA Café. Enjoy shopping for home-baked Swedish delicacies, Swedish crafts, holiday decorations, candy, custom-decorated gingerbread hearts, flower arrangements, and much more. This year it's at a new location!

Did you know that we ship our baked goods and Bread Mixes to the entire USA? If you want to buy our bread mixes for shipping, you can do that directly on our website. Want to include our yummy bread, muffins, or scones in your order? If so, we recommend placing your order by 2 pm Monday, December 15, at the latest, by emailing CustomerService@havenlybaked.com. We recommend putting your baked goods in the freezer upon receipt, defrost, and bake at 425°F for 5 min before serving, and enjoy!
(If you place your order after 12/15 at 2 pm, we have to ship your bread using the more expensive 2-day air option.)

We have done it the old-fashioned way from scratch: baked the bread, cut it into croutons size pieces, roasted it, and added delicious spices and herbs. All you need to do is follow the easy recipe on the back of the package and add onion, celery, green apple, parsley, some white wine, and broth (each package serves 8). Order your Stuffing Mix with pick-up at our bakery. We also ship our Hävenly Stuffing Mixes (be sure to order by November 20 so we can get it to you in time for Thanksgiving).
