Gluten Free Takeover at Stanley Marketplace this Saturday! 
A celiac customer who was visiting from Alaska stopped by the bakery today, and I told him about the Gluten Free Takeover happening this Saturday, March 8, from 10 am - 1 pm. As we were speaking he paused, looked at me, and said "you must really not like malls, because you mentioned it twice, but clearly you like Stanley Marketplace". And it's true... I didn't grow up with malls, and I don't particularly like them. BUT Stanley Marketplace is different. You can feel the history in every part of this amazing building. It's fun to be in. It's great to visit!  

The History of Stanley Aviation

Stanley Aviation opened as a 75,000 sq. ft. manufacturing facility in 1954, and expanded to 140,000 sq. ft. within a few years. The plant soon became the largest employer in Aurora. Blown away by Boxcar's coffee and AMAZING Sandwiches 
Yesterday, I went to Boxcar Mesa Cafe to take pictures and spread the word. I enjoyed the coffee right away (it's seriously so good), but didn't have time to eat the sandwiches. Cooper and his sweet team packed them to go. Around 5.30 pm I was grabbing my daughter to see Trash the Runway, and we had the sandwiches in the car. OMG! My daughter took her first bites and said in Swedish "Mom these are so good, who made them for you?". If they are this good so late in the day, I can't imagine how divine these sandwiches will be, hot and enjoyed at the Boxcar Cafe in South Boulder! You have to try them. And on your way to travel? Grab them for some of the most amazing sandwiches you'll ever enjoy on the road!

All their sandwiches are fantastic, and we so enjoyed their Breakfast Sandwich on a Hävenly Morning Oat Bun stacked high with mashed avocado, pickled red onions, tomatoes, muenster cheese and egg. The Mushroom Toast served on Hävenly Rustic toast was equally fabulous featuring herbed baby bella mushrooms piled on whipped stracciatella and finished with parsley, salt and olive oil. 

And the coffee? Delightful and the cornerstone of their operations. I have to admit that I don't drink much coffee, but when I do, it's Boxcar's! Boxcar was started in 2010 by husband and wife team, Vajra and Cara Rich, with the goal of building a world-class roasting company in their hometown of Boulder, Colorado. And they succeeded! After starting as a standalone roastery and building a small following by partnering with some amazing local restaurants and cafes, they opened the doors to their first cafe on the sleepy east end of Pearl St. in downtown Boulder, followed by their stunning cafe on 637 S Broadway in South Boulder off Table Mesa. Their spaces include two busy cafes, a bakery, and a dedicated roastery and training lab, which serves numerous wholesale accounts and also ships directly to consumers around the country.

😋🥦You got to make this creamy vegan "cheese" soup! Delicious! 🥦😋

THE best creamy vegan "cheese" soup ever! 

We call this Selena's soup because our friend Selena made it for us for the first time, and it became an instant hit with our entire family. She called it a vegan broccoli potato cheese soup, but I think all veggies blend so nicely together that it doesn't really taste like a broccoli soup. Which is probably good because I don't really like broccoli soup that much :). It is perfect for a cold winter day served with some toasted Hävenly Rustic Bread or maybe a toasted Nordic Keto bun! We are sure you'll love it as much as we do. 

Selena's Creamy Vegan Veggie Soup
You can finely cut all vegetables OR cut them coarsely and then blend them all at the end in a mixer. We preferred the later because it combines all the flavors beautifully. 

 

Ingredients (about 6 servings)
1 cup raw unsalted cashews
1 tbsp olive oil
1/2 medium onion diced
3 medium-sized carrots (cut in bigger pieces)
2 garlic cloves (coarsely cut)
2 lb russet potatoes (peeled and cut in bigger pieces)
2 cups chopped broccoli florets (don't forget to use the stems - just peel the outer "rind')
4 cups vegetable broth
1 tsp paprika
1 tsp onion powder
2 tsp sea salt
1/2 tsp black pepper plus extra to taste 
2 tbsp nutritional yeast
1 tbsp lemon juice
1 1/2 cup water (or more if too thick)
2 green diced onions or parsley (for garnish)


Directions
1. Place cashews in a bowl and cover with boiling water. Let soak while you make the soup.
2. Cut onion and carrots and saute in some cooking oil for 3-4 minutes until they begin to soften. Add garlic and saute for about a minute.
3. Add cut potatoes, vegetable broth, paprika, onion powder, 1 tsp salt and some black pepper. Bring to a boil, then reduce to medium heat. Cover and cook for 10 minutes.
4. Stir in broccoli and cook for another 10 minutes over medium heat.
5. Drain the cashews.
6. Add cashews, vegetables, nutritional yeast, lemon juice, 1 tsp salt and water. Use a hand blender to mix all ingredients or blend using a mixer. Depending on the size of your mixer, you might need to mix it in portions and then combine back in a bigger pot. Stir well to combine. 
7. Taste test and add more salt or pepper as needed.
8. Serve soup with diced green onions or parsley along with your favorite Hävenly toast!

We are with you Los Angeles

Not long ago our own Colorado community was hit by the Marshall fires. Still, the horrors and devastation caused by the LA wildfires are hard to comprehend. We are on the phone with family and friends praying that they don't have to evacuate and stay safe. Our hearts and prayers go out to them and to the entire LA community and the surrounding area. 

 We believe every donation makes a difference and, therefore, donate all proceeds from today and tomorrow's sales to Baby2Baby.. This top-ranked non-profit has its headquarters in LA and helps children living in poverty across the country with basic necessities. Baby2Baby has already distributed over 3 million emergency supplies for the most vulnerable children and families who have lost everything in the Los Angeles fires, including diapers, food, formula, water, clothing, blankets, and hygiene products, and we are committed to continuing this work for the weeks and months to come. They need our help!

🇸🇪🎅 SWEDISH PALEO "Pepparkakor" RECIPE 🎅🇸🇪
You'd never believe these are gluten-free! So good! Give them a try. 
 
Ingredients
170 g coconut sugar (or sugar of your choice)
50 g agave syrup
75 g butter or coconut oil
2 tsp ground cardamom
3 tsp cinnamon
2 tsp ground cloves
2 tsp ginger powder
1/4 tsp salt
1 tsp baking soda
1 tsp psyllium husk
45 g almond flour
90 g buckwheat flour
135 g oat flour
1 egg (or egg substitute)
+ Almond slivers for decoration (optional)
(extra buckwheat or rice flour for baking)

Baking Instructions
1. Mix sugar and agave syrup in a small saucepan or smaller pot. Bring to a boil while stirring at medium heat. Add the butter/coconut oil and let it melt. Add the spices and remove pot from heat. Let it cool down until lukewarm.
2. Mix all remaining dry ingredients in a separate bowl.
3. Add the lukewarm sugar-mix in the dry ingredient bowl. We like to use a food processor or a hand mixer for a few minutes. Scrape down the sides or bottom of bowl if needed.
4. Add the egg and finish mixing.
5. Add some more buckwheat flour if needed to get a pretty firm dough. 
5. Place the dough in a container and let it stand in the refrigerator for at least an hour. Even better to let it rest in the refrigerator overnight.
6. Roll out smaller portions of the dough at a time with a rolling pin. We like to have plenty of buckwheat or rice flour on our baking table and rolling pin. If the dough is difficult to work with try adding some more flour. Roll it out as thinly as you can (1/8'' or about 2-3 millimeters). Cut out your cookies and place on a baking paper on a baking sheet (smaller cookie cutter shapes are easier to work with).

TIP: We recommend keeping the dough in the refrigerator and taking out smaller portions at a time. Put the glass upside down and press for a round cookie. The dough will stick to the glass and then it's super easy to move it to the baking paper. Once cookies are on your baking sheet paper you can decorate the cookies by pressing in almond slivers. 

7. Bake 6-9 minutes at 340F. Keep an eye on your cookies as they burn easily!

8. Let them cool. 
Enjoy!

Using a smaller glass is the easiest way to cut out the gingerbread cookies and to move them to the baking sheet paper!

So good you won’t believe they are GF!
