  Vegan Easy-to-Make Pistachio Cardamom Ice Cream

Our dear friends Martha and Ally invited us over for an Indian themed dinner, and we were asked if we wanted to bring dessert. I started to look for Indian paleo friendly recipes and came across Ashley's recipe for Kulfi Ice Cream on My Heart Beets website. I didn't have a lot of time, and wanted something easy to make. Her introduction caught my interest: 

"This delicious cardamom-infused Indian ice cream is about to become a summer staple. Today I’m sharing a recipe for kulfi that is paleo, vegan, gluten-free, and dairy-free! No need for an ice cream machine either!"

The cardamom got me set to try the recipe. As you might know, Swedes love cardamom in anything sweet! And let me tell you. this dessert was a hit with adults and kids alike. No one suspected that it was both dairy-free and vegan! I used heart shaped silicone ice cubes (each about 1.5" in diameter) for a pretty presentation, but you can also use small cups or smaller ramekins. 

I decided to make my own cashew milk as it's simple if you plan ahead, but if you are in a time crunch, you can use unsweetened store bought cashew milk (if you buy sweetened cashew milk you might want to reduce the maple syrup/honey). Give it a try. You'll love this easy to make healthy dessert! 

Recipe: Paleo Pistachio Cardamom Kulfi Ice Cream

Ingredients

  • 2 cups unsweetened cashew milk (simple to make at home with a little bit of planning, or use store-bought unsweetened cashew milk). See recipe below.

  • 1 can full-fat coconut milk (13.5 ounces)  

  • ¼ -1/2 teaspoon ground cardamom 

  • Pinch of saffron 

  • ¼ cup almond flour 

  • 2 tablespoons or more maple syrup, agave or honey, to taste

  • ¼ cup pistachios finely chopped, plus extra for garnish

Instructions

  • Add the cashew milk, coconut milk, cardamom and saffron to a pot and bring the mixture to a full boil. Keep an eye on the pot so that it doesn’t boil over.

  • Reduce the heat to a simmer, and cook for 5 minutes, stirring occasionally.

  • Add the almond flour, and continue to cook for another 2 minutes.

  • Turn off the heat and immediately stir in the sweetener and pistachios. Allow the mixture to cool on the stovetop. Taste the mixture and add more sweetener to taste if needed.

  • Pour the mixture into an ice cream mold and freeze until solid.

  • When serving, garnish with crushed pistachios (and raspberries, optional) 

Recipe Cashew Milk
Ingredients

  • 1 cup raw, unsalted cashews 

  • 4 cups filtered water

  • 2 pitted medjool dates

  • pinch of salt

  • 1 tsp vanilla extract

Instructions
Soak: Soak cashews together with the dates 4-6 hours or overnight. For a quick method, cover the cashews with boiling and let sit for 1 hour.
Drain & Rinse: Drain the cashews/dates and rinse them.
Blend: Add the soaked cashews, dates, salt and 4 cups of water to a high-power blender. Blend for 1-2 minutes on high speed until completely smooth and frothy (if you don't have a high-powered blender strain through a nut milk bag or a cheesecloth for a smoother texture).
Store: Pour into a sealed glass container. Store in refrigerator for 4-5 days.

Final Gluten-Free Takeover at Stanley this Sat + Crazy start to the Boulder Farmers Market Season!

What a Crazy Start to the Boulder Farmers Market: Our tents got stolen.
We had a bit of a rough start to the Boulder Farmers Market Season.  Friday evening before the first market, we were shocked to realize someone had stolen our two tents from the bakery. Both are less than a year old, and one is custom-printed. These tents are not only expensive to replace but also add a lot of last-minute stress. However, what a great support we had from our community! In response to a social media post, kind customers, neighbors, and other vendors offered to lend us their tents and weights. A huge thank you and shout out to Bruna of Bruna's Brazilian Cheesebread, who brought an extra tent for us and tent weights last weekend. Also, a warm thank you to Charlie at Green Belly Hot Sauce, who gave us tents to use until we can replace ours. If you haven't tried their products, please do. Both gluten-free and delicious, both are at the Boulder Farmers Market! 
What a beautiful community we have. We are forever grateful!

Festive Green Pea Soup with Champagne to welcome the New Year! 
- Crème Ninon with Rustic Baguette-

Our time in Sweden has been wonderful and calm with friends and family. Lots of short walks to get some daylight and evenings with candles and tea. Now we are preparing for New Year's Eve, which is a big celebration in Sweden. We meet with friends, dress up, and eat an elaborate meal. We are responsible for the appetizers and first course, and will bring warm goat cheese canapes with homemade cloudberry jam, and a "Crème Ninon" - green pea soup with champagne. Scroll down for the recipe of this classic Swedish Crème Ninon, a luxurious soup often served at celebrations.  Easy to make, GF, and festive. Can be made vegan! Serve with toasted Hävenly Rustic Baguette. We will bake the Rustic Baguette and other Rustic products this Wednesday, 12/31. Be sure to place your order online by Tuesday, 4 pm, for Wednesday pickup.

Crème Ninon Soup Recipe
Ingredients (for 4-6 p)

  • Yellow onion: 1 small, finely chopped

  • Garlic: 2 cloves, crushed or chopped

  • Vegetable Broth: About 3 cups

  • Green Peas (frozen): 1 lb (about 500g)

  • Champagne: About  3.5 oz (1 dl) — Use a dry or extra dry (Brut) for the best balance.

  • Butter or Olive Oil: for sautéing

  • Salt & Pepper: to taste

  • Fresh Herbs: Parsley, mint, or basil for garnish

  • Heavy Cream (Optional): About 3.5 ounces (1dl)

Instructions

  1. Melt the butter or heat the olive oil in a saucepan over medium heat. Sauté the chopped onion until soft and translucent (do not let it brown). Add the crushed/chopped garlic and sauté for another minute.

  2. Add the frozen green peas to the pan and stir them with the onions and garlic for about 2 minutes.

  3. Pour in the vegetable broth and bring to a boil. Lower the heat and let it simmer for 10–15 minutes until the peas are completely soft.

  4. Use an immersion blender (or a regular blender) to process the soup until completely smooth. If you prefer a thinner consistency, add a little more broth or water.

  5. Once smooth and at the desired thickness, pour in the champagne. Return the pan to the heat briefly just to warm it through (do not boil off all the bubbles). Season with salt and pepper to taste.

  6. Serve: Ladle the soup into bowls. For extra richness, you can stir in or top with a swirl of heavy cream. Garnish with fresh parsley, basil, or mint.
