We are open as normal this week so please place your order of your Hävenly Baked Goods by 9 am (Friday), and we'll have it ready Friday from 1 pm for pick-up at the bakery. How about Thanksgiving? You can grab your bread this Friday and freeze it until the morning of Thanksgiving. Take out your bread to defrost, and right before serving pre-heat oven to 400F and bake for 3-5 minutes! Old Fashioned Cornbread

Recipe and photos are from Gluten-Free on a Shoestring, and we are grateful for this back-to-basic yummy cornbread! We find it easiest to bake it in a cast-iron skillet, but if you don't have one, simply use a 9" cake pan. See below for replacement suggestions if you'd like it dairy-free, egg-free or vegan.

If you have leftovers that you won't eat the next day, we recommend freezing them right away and then taking them out and enjoying another day. If you know for sure you won't eat it all, you can replace half of the cornflour with some all-purpose gluten-free flour. 


Ingredients (see substitute suggestions below)

  • 2 cups coarsely ground yellow cornmeal

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon kosher salt

  • 1 ½ cups plain yogurt at room temperature.

  • 4 tablespoons unsalted butter melted and cooled

  • 1 large egg at room temperature, beaten

  • 4 tablespoons honey

Dairy-Free? Egg Free? Vegan?
Yogurt -> dairy-free yogurt.
Butter -> your favorite vegan butter. We have successfully used Earth Balance buttery sticks.
Egg -> Use your favorite egg substitute. The original recipe recommends 1 tablespoon ground chia seeds + 1 tablespoon lukewarm water, mixed and allowed to gel.
Honey -> coconut sugar or maple syrup

Instructions

  • Preheat your oven to 400°F. Grease a 12-inch cast-iron skillet or an 8-inch square or round pan, and set it aside.

  • In a large bowl, place the cornmeal, baking powder, baking soda, and salt, and whisk to combine well. In a separate bowl, place the yogurt, butter, and egg, and whisk to combine well.

  • Create a well in the dry ingredients and pour in the wet ingredients and the honey. Mix until just combined. The mixture will be relatively thin. Pour the mixture into the prepared pan.

  • Bake for 20-30 minutes (closer to 20 minutes if using a cast-iron skillet, closer to 25 minutes if you made the all-purpose gluten-free flour variation), or until lightly golden brown on top, golden brown around the edges, and firm to the touch in the center. Slice and serve immediately.

Love Boule Challah Style + Amazing Honey Cake Recipe!
If you haven't yet done so, please order your Love Boule by tomorrow night for pick-up this Friday. If you want it for break fast, just put it in the freezer, take it out the morning of October 5. Preheat the oven to 400F and bake for 3-5 minutes right before serving. The Honey Cake you'll have to bake yourself, but it's so worth it!

Let me tell you a bit about this cake...Yesterday I did something unusual, namely, I carved out some time to meet a dear girlfriend of mine. She had taken the day off from her hectic job and kindly offered to bring lunch. We sat outside under the trees, talked, and enjoyed a beautiful meal. In the end, she surprised me with a Honey Cake so delicious my jaw dropped. My friend immediately ordered me the cookbook "The New Yiddish Kitchen" with all gluten- and dairy-free recipes as a gift. The cookbook is beautiful and the recipes inspiring. I am grateful that I can share the Honey Cake recipe with you, and I wish all of us more quality time with our friends along with wonderful healthy baked goods!

Honey Cake


Ingredients for the Cake
Oil for greasing the pan
4 eggs
1 cup coconut sugar
1 cup honey
1 1/2 tsp vanilla
1 cup strong black tea, cooled (my friend used decaf tea)
3 tbs bourbon or whiskey (my friend replaced it with more decaf tea)
3 cups almond flour
1 1/2 cup arrowroot powder (plus more for flouring the pan)
3/4 cup coconut flour
1 1/2 tsp baking soda
2 tsp ground cinnamon
3/4 tsp allspice
3/4 tsp ground cardamom
1 1/2 tsp salt

Ingredients for the Icing
1/4 cup coconut butter
2 tbs honey
1/3 cup full-fat coconut milk
1/4 tsp cinnamon
1/4 tsp cardamom
1/2 tsp vanilla


Baking Instructions

  1. Preheat the oven to 350F (177C).

  2. Grease and flour a 12 cup (2.8 liter) bunt pan.

  3. In a large bowl, beat the eggs, coconut sugar, honey, vanilla, tea (and bourbon/whiskey) until well incorporated.

  4. Pour the batter into your prepared pan and bake for 40-50 minutes, or until the top bounces back when you gently push it and a knife inserted into the center comes out clean.

  5. Allow to cool on a wire rack before inverting onto a plate.

To make the icing, melt the coconut butter in a small saucepan and then add the remaining ingredients. Remove from heat and whisk to combine. Transfer to a sealable plastic bag, trying to get it into one corner as much as possible. Cut just the tip of the corner and drizzle the icing over the cake.

The Best Ever Oven Roasted Baby Potatoes!
We hope you had a fabulous labor day weekend. We took off camping and needed something quick and easy to bring and I stumbled on this recipe from Natasha's Kitchen. These potatoes were so easy to make and the kids LOVED them! Give it a try and let us know what you think.

Ingredients
3 lbs baby red potatoes, unpeeled
2 Tbsp olive oil
1 1/2 tsp dry parsley
1 tsp sea salt or 3/4 tsp table salt
1/2 tsp freshly ground pepper
2 cloves garlic, pressed

Cooking Instructions
1. Heat oven to 425F.
2. Cut potatoes into 1″ to 1 1/2″ pieces. No need to cut the really tiny potatoes. Place them in a large pot half full with warm water. Bring potatoes to a boil and cook for 7-9 minutes (they should be almost cooked). Drain and set aside.
3. In a small bowl, mix together 2 Tbsp olive oil, 2 pressed garlic cloves, 1 1/2 tsp dry parsley, 1 tsp sea salt (or 3/4 tsp table salt) and 1/2 tsp black pepper.
4. Gently toss potatoes with the seasoning mix until evenly coated (it helps to use a large mixing bowl for tossing).
5. Transfer potatoes to a large rimmed, non-stick baking pan and place cut side down. Bake at 425°F for 20 minutes or until the sides facing the pan are golden. Transfer to a serving dish and enjoy!

Colorado Ratatouille orchestrated by Chef Aaron
Last year we had the honor to meet Chef Aaron Lande at a fundraising dinner to support our local public school. The food was sensational and we learned that Chef Aaron only uses the best local ingredients. You might have encountered him at a symphony orchestra throughout Colorado as he is also a professional violinist. About this Colorado Ratatouille, Chef Aaron says:

"We are blessed here in Boulder County with a fantastic array of summer squashes, eggplants, peppers, and tomatoes grown by our amazing local farmers during the summer. I love doing various takes on ratatouille to highlight different heirloom varieties of these vegetables, sometimes spicy, sometimes herby, and always incredibly delicious. This recipe is meant as a formula, not an exact measurement of everything, and should be a springboard for your creativity. The most important part of this is going to farm stands or the farmers market to source all of your vegetables. Although I’m suggesting a farm for each vegetable, this is in no way steadfast, nor is the specific variety of vegetables."


We have taken the liberty to simplify it a little, and below the recipe, you'll find Chef Aaron's specific suggestions on what ingredients to use in the coming weeks using the finest ingredients from local farms!

Ingredients

- 4 small squashes
- 1 zucchini from Red Wagon Organic Farm
- 2 eggplants
- 2 Anaheim peppers
- 1 Inferno Banana pepper
- 2 bell peppers (different colors if possible)
- 1 red onion
- 2 cloves of garlic
- 3 heirloom tomatoes (different colors if possible)
- 12 cherry tomatoes
-15 fresh basil leaves
- 2 Tablespoons (or more) oil for sautéing
- salt and pepper to taste

Cooking Instructions
1. Mince the garlic and set aside.
2. Cut the rest of the vegetables into medium dice (1/2 inch squares), OR cut summer squashes and eggplants into rounds (fairly thin) and julienne the peppers and onions. (Keep the squashes and eggplants separate).
3. Salt the summer squashes and eggplants (fairly aggressively) and set in a colander for at least 15-20 minutes. This will help draw water out, season, and set texture. After letting them sit squeeze them aggressively, and water should come out of them.
4. Get a big frying pan hot, then add oil and immediately add summer squashes and ground black pepper. Cook on high heat quickly, making sure they don’t cook long enough to get soft (they should be just barely cooked and the pan should be hot enough that they get a little bit of color). Set aside and repeat using eggplants. Set aside and repeat using peppers, but add salt and pepper to the peppers as they have not yet been seasoned. Set aside and repeat using onions. Set aside.
5. Get the pan hot again and start by adding garlic to your hot oil, cook for 10 seconds, then add all the tomatoes. Cook just long enough that they start to break down. Then combine all of the now cooked vegetables in a big bowl.
6. Taste, and add salt and ground black pepper if necessary.
7. Spoon onto plates and top with finely julienned fresh basil.


This dish should be served barely warm or at room temperature (it’s not meant to be served piping hot). Goes perfectly with Hävenly Rustic Toast! Enjoy!
