Fresh Thymes famous grain-free, nut-free Tahini Ginger Cookie Recipe


Using fresh ginger elevates the feel of these chewy cookies. The fresh ginger stimulates your digestive system and reduces inflammation which is soothing to your gut.  Coconut sugar is considered a whole food as it has not been refined and contains inulin, an important pre-biotic fiber, as well as a host of vital minerals. Additionally, tahini is extremely high in calcium, making these cookies indulgent, but also a guilt-free bio-available mineral treat.
 

Ingredients

1 cup fresh ginger, skin removed and sliced into coins
¾  cup warm water
3 tbsp flax meal
4 cups “hard or dry tahini” (oil drained off)** see note
2 ½ cups coconut sugar
1 oz baking soda
1 tbsp + 1tsp high mineral sea salt 
3 tbsp cinnamon 
¼ tsp cardamom
1 teaspoon ground nutmeg

 

Preheat oven to 325 degrees

 

Instructions

  1. Peel ginger using a spoon and slice into coins

  2. Add ginger and water to a high speed blender and blend well on high

  3. Pour ginger mix into flax meal and mix well

  4. Add dry ingredients to a large mixing bowl and mix well

  5. Add tahini and ginger mixture to dry ingredients and mix well using gloved or lightly oiled hands

 

The dough will be very moist, almost like wet sand, with an inviting oily sheen.  
Scoop ¼ cup spoonfuls of dough onto a sheet pan lined with parchment, or a silicone baking mat. Arrange 6 cookies per sheet pan and bake for 7 minutes, rotating pan halfway through cooking.  Remove from oven and while hot, use a fork if desired to create a cross-hatch and sprinkle lightly with flaky sea salt.  

 

NOTE: 

  • When you purchase the tahini, remove the lid, then pour off the oil at the top.  These cookies will bake differently based on this alone.  This is why Fresh Thymes ginger cookies could be temperamental. The drier the tahini, the more firm the cookie.

  • This will make more dough than one batch. You can form the dough into logs, wrap in parchment, and freeze until ready to bake. Just like grade school - slice them into rounds while frozen and put them in the warmed oven.

   🌻 Harvest Fest in Nederland this Sunday 🌻
We are excited to be back in Nederland for the amazing annual Harvest Fest. Such a beautiful setting and lovely atmosphere. We hope we get to see you this Sunday, October 1, from 10 am - 4 pm in Nederland!

There will be over 70 vendors. tons of activities, and 5.5 hours of live music! Oh, and also plenty of adult beverages and food trucks.

Raisin Love Boule Challah Style +  Amazing Honey Cake Recipe! 
If you haven't yet done so, please order your 
Raisin Love Boule for pick-up this week. If you want it to break the fast, just put it in the freezer, and take it out the morning of September 25. Preheat the oven to 400F and bake for 3-5 minutes right before serving. 

Some of you might remember the below Honey Cake recipe that I posted last year after my dear friend shared it with me right before Yom Kippur. This year I was first going to try a new apple cake recipe, but it got late at the bakery and I had to take care of groceries and kids. As you can imagine, when time was short, I fell back on this favorite recipe of mine. It's easy to bake and delicious. As I'm writing this, the cake is cooling and I will have to complete the yummy icing tomorrow! 

This past week, I was reminded to look at the small things in life and be grateful for them. This will make it easier to navigate a troubled world and will lift our spirits in order to tackle small and large obstacles. Baking this delicious and healthy cake with my daughter - and knowing I will get to share it with friends this weekend - made me feel very fortunate.  I wish you many small and big moments of appreciation in your daily life, and am grateful to share wonderful healthy baked goods with you!  

Honey Cake Recipe
- Originally from the The New Yiddish Kitchen - 


Ingredients for the Cake
Oil for greasing the pan
4 eggs
1 cup coconut sugar
1 cup honey
1 1/2 tsp vanilla
1 cup strong black tea, cooled (my friend used decaf tea)
3 tbs bourbon or whiskey (my friend replaced it with more decaf tea)
3 cups almond flour
1 1/2 cup arrowroot powder (plus more for flouring the pan)
3/4 cup coconut flour
1 1/2 tsp baking soda
2 tsp ground cinnamon
3/4 tsp allspice
3/4 tsp ground cardamom
1 1/2 tsp salt

Ingredients for the Icing
1/4 cup coconut butter
2 tbs honey
1/3 cup full-fat coconut milk
1/4 tsp cinnamon
1/4 tsp cardamom
1/2 tsp vanilla


Baking Instructions

  1. Preheat the oven to 350F (177C).

  2. Grease and flour a 12 cup (2.8 liter) bunt pan (I used coconut oil and arrowroot powder). 

  3. In a large bowl, beat the eggs, coconut sugar, honey, vanilla, tea (and bourbon/whiskey) until well incorporated.

  4. In a medium bowl, whisk together the almond flour, arrowroot, coconut flour, baking soda, cinnamon, allspice. cardamom and salt. Add to the liquid mixture and beat for another minute. 

  5. Pour the batter into your prepared pan and bake for 40-50 minutes, or until the top bounces back when you gently push it and a knife inserted into the center comes out clean.

  6. Allow to cool on a wire rack before inverting onto a plate. 

To make the icing, melt the coconut butter in a small saucepan and then add the remaining ingredients. Remove from heat and whisk to combine.  Transfer to a sealable plastic bag, trying to get it into one corner as much as possible. Cut just the tip of the corner and drizzle the icing over the cake.

The Jewish holidays are deeply connected with food. For Rosh Hashanah - The Jewish New Year - we bake sweet round Challah. This Friday we will bake our regular Love Boules and also Love Raisin Love Boule Challah featuring shredded organic raisins to add a little extra sweetness. Please place your order for your Love Boule or Raisin Love Boule Challah and we'll have it ready this Friday.

During this time of year, we dip our round sweet challah in honey. Another wonderful tradition - and a fabulously healthy snack - is to dip apples in honey. The apple represents both the earth and the year, and we hope that it will be sweet for all of us! 

For us, this is also a time to take a deep breath, make amends, and see what we would like to bring into the new year, and what we would like to leave behind. It's also a time when we look at what we would like to change to make us a better person towards ourselves and others. Personally, these past few days have been hard with friends passing away of cancer at a way too young age. It shows how uncertain and precious life is, and the importance of trying to live each day as a kinder and better person. Please take care of yourself and your loved ones, and maybe show a stranger some extra compassion.

When you travel the Peak to Peak Highway, it’s hard to miss the iconic set of three train cars sitting in the middle of Nederland. Converted into a cafe, this landmark has been a local fixture since the early 1980s. In 2022 Train Cars was purchased by longtime employee Jesse Fox and underwent its next stage in transformation. Keeping to the tradition of offering locally roasted coffee and a variety of delectable menu items, Fox also added a full kava menu and a stacked roster of music events.

building itself, the refreshing beverages, the hefty sandwiches, or the different musical events, there’s something for everyone! Working with local businesses to provide top-quality products has been a longtime tradition at the Train Cars. In its current iteration Train Cars

Jess fulfilled her childhood dream when she transformed the old Pharmaca space on 1647 Pearl Street into a vibrant, bright, and welcoming space to gather. It's all about coffee, beer, wine, and big smiles and Creature Comforts had it's soft opening at the end of July. So imagine the horror when Jess earlier this week found the building broken into and her storage space emptied.  These nasty burglars even took unique furniture Jess was assembling. So this is the time to show her and her wonderful team some extra love. Come and enjoy a delicious cup of coffee (or maybe a glass of wine!) along with a Hävenly Mini Power Muffin or maybe a Hävenly Rustic PB&J!

Sold out, but we've got room behind our booth!

The vibe and the scenery of Nederland are both lovely.  As a small bakery, it's hard for us to staff multiple markets. This Saturday, however, you will find us both at the Boulder Farmers Market and at the Nederland Jazz & Wine Festival Jazz & Wine Festival. We are excited to meet old and new customers, hear the music, and sip some wine! Hopefully, you bought tickets already because it looks like the Jazz & Wine Festival sold out. Want to spend an hour supporting us at our booth? If so, we have an extra ticket for a staff member! First come, first serve: email katarina@havenlybaked.com and we will put your name on the staffing list. The event goes from 11 am - 5 pm so you'll have plenty of time to explore.

Join us for the 1st ever Gluten Free Food Drive & Fair on 8/19 from 10 am - 1 pm hosted at Good Love Foods in Longmont, Colorado at 1254 Sherman Dr, Unit 4. 

Hävenly is proud to take part in this awesome event and to donate bread to the  Marshall ROC. Marshall ROC is a nonprofit long-term recovery group for the Marshall Fire & Windstorm, and it has an emergency food pantry for families impacted by the Marshall Fires. Since many of these families have gluten sensitivities they work to source items to help serve their needs.  

This is a fun event where you get to meet and try products from lots of great GF vendors like Aqua Duck, Good Love Foods, Nancy’s Notable Nibbles, Green Bus Cafe, Hävenly Baked Goods, Charcuterie Marie, and Onana. You also get to tour Good Love's production facility.

Please bring at least one non-perishable, undamaged, unexpired gluten-free goods to donate to families in need (like rice, beans, canned fruit, vegetables, condiments, and plant-based protein items such as peanut butter). The event supports Warren Village, Precious 12,  Adam’s 12 School District, Backpack Society, Marshall ROC, Englewood Food Bank, and Englewood Schools!

When grocery store organic isn't enough, Waves of Grain (WoG) food cooperative is here for you. WoG provides access to local, fresh, nutrient-dense, pesticide-free food grown and handled by people we know and trust!

Ben and Red, the two current working owners of WoG, set out to make buying food from local farms easier. Ben grew up on an organic farm in Maine and once he moved to Colorado his dedication to providing families with easy access to local and sustainably farmed food fueled him to start WoG. Red, who has a Master's in sustainable food systems, supports farms with soil restoration and sustainable system designs.  Demand was strong, but securing enough supply was difficult. The coop realized that to increase access it also needed to increase production. This year, the coop is working with more and larger farms, as well as helping new farms to get started including the regenerative Mountain Praire Farm. They also offer locally produced products like Hävenly Baked Goods for weekly pick-up in Boulder, Longmont, Lafayette, and Loveland! And as of this season, you can visit their farm stand every Thursday at East Simpson Coffee (see more below).
