Mom's Wild Mushroom Soup with GF dumplings "kluski"

It's been a hectic few weeks. We finally moved into our own new dedicated gluten-free kitchen (we'll tell more about it next week) and have been busy trying to settle into this new beautiful space! On top of that was spring break and we managed to sneak away a few days to Steamboat with our girls for some skiing. Now we are back and delighted to share my mom's wild mushroom soup with GF dumplings ("kluski"). When my mom visited she brought me dried wild mushrooms from Poland. I am not sure of all the different types, but you can use Porcini Mushrooms (known in Sweden as Karl Johanssvamp) and other dried mushrooms. I shared a recipe for GF kluski last year, and now I have fined tuned the recipe so it's even yummier. This soup is incredibly easy to make so please check out the recipe below.

So few ingredients yet so flavorful!

Mom's Wild Mushroom Soup with GF dumplings ("Kluski")
Growing up my mom made this soup based on dried wild mushrooms and Polish homemade dumplings ("kluski"). Now with a more fine-tuned recipe for gluten-free kluski. Kids love it.

If you are vegan, just omit the dumplings, or try making them with an egg substitute and let us know how it goes!


Soup Ingredients
- 6-12 ounces dried wild mushrooms. The more the yummier (you can also add some fresh mushrooms if you'd like).
- Mushroom bouillon (enough for 8-12 cups of water)
- Salt and pepper to taste

Instructions for Soup
1. Pour hot or boiling water over the dried mushrooms in a small bowl so that the mushrooms are covered. Put a small plate on top of the mushrooms to push them into the water. Let soak for at least one hour.
2. Take out the mushrooms (save the water they soaked in!) and cut into small pieces.
3. Place mushrooms and the soaking water into a pot (you can also add fresh mushrooms at this time). Add about 8-12 cups of water, bouillon, salt, and pepper. Bring to a boil then lower the heat and let simmer for about an hour.
4. Taste and add more bouillon, salt, pepper as needed.

Dumpling "kluski" Ingredients
- 2 medium-size eggs
- 0.5 tsp salt
- black pepper to taste
- 3 tsp white rice flour
- 3 tsp sorghum flour
- 3 tsp potato flour
- 1/2 tsp psyllium husk

Instructions for kluski
1. Whisk the eggs with a fork. Add salt and pepper.
2. In a separate bowl mix the rice flour, potato starch, sorghum flour, and psyllium husk (the mixture needs to be very thick)
3. Bring the soup to a rapid boil. Take a small amount of the mix on a teaspoon (about half a tsp) and drop it in the boiling soup with the help of another teaspoon. If it forms a little dumpling, you got it right. If it doesn't hold together add more flour mix to the eggs.
4. Repeat making the dumplings by putting a small amount onto spoon and drop into soup. Boil for 3-5 minutes.
5. Serve with Hävenly Rustic!

As we are preparing to share some BIG news in the next coming weeks, we wanted to use this newsletter to highlight a few of our fabulous bakers and members of the Hävenly team.

Many of you have met Mateo in person at the farmer's markets. You can't miss him with his friendly smile and easy way to connect with you all. We are grateful to have Mateo on our team. When he's not helping us bake, he is pursuing his dream of becoming a personal fitness trainer. You can watch those muscles grow when you visit us at the farmer's markets this spring. We got a full-time spot as a vendor at the Boulder Saturday market (hurray) and Mateo will manage the markets so come and say hi!

We'd also like to use this opportunity to introduce you to Jaime and Fermin. Master bakers with a warm smile behind the scenes. They get up super early and bake Havenly's bread with dedication and commitment that can be felt in each bun and every loaf. We are so grateful to have them be part of the Hävenly team, and we'd like to use this opportunity to thank them for all that they do! They are both loving fathers and enjoy spending time with their families.

Love. Imperfection. Donuts

Valentines can come with so many expectations. I had intended to have a romantic lunch with my husband, bake fantastic paleo/vegan donuts with my kids, and then use the photos for an amazing marketing email to all our most wonderful customers. So what happened? Hubby and I got caught up in work, and all I had time for was to give him a box of matches as a tiny gift before I ran out the door. The family celebrations got pushed off as we juggled kids' activities. However, the kids did surprise me late at night with some decorated cakes, candles, and a card. Nothing went as planned, but I took a deep breath and my heart was filled with joy.

I'd like to take a moment to recognize that our plans don't always come to fruition. Our lives don't live up to the perfect images displayed on social media. For many Valentine's can be a sad day as they don't get to celebrate with the ones they love. Life and love are imperfect. Having said this I hope you found some spark of joy and love, be it with a friend, your four-legged buddy, or by helping someone else. As imperfect as we are, please know that we are thinking of all of our wonderful customers. and know that we put lots of love into baking for you!

GLAZED VEGAN CHOCOLATE DONUTS WITH RASPBERRIES

If you don't have a donut form, try making donut holes! Form 2-3 TBSP of batter into balls and bake on a parchment-lined baking sheet for about 6-8 minutes.


Ingredients

Donuts

  • 1/4 cup carob powder or cacao powder

  • 3/4 cup cassava flour

  • 1/2 cup coconut sugar

  • 1 tsp baking soda

  • 1/2 tsp cream of tartar (you can leave out if you don't have, but will be fluffier with)

  • 1/2 tsp sea salt

  • 1/4 cup coconut butter, completely melted

  • 1/2 cup unsweetened applesauce

  • 2 tsp vanilla extract

  • 1/4 cup olive oil

  • 2 TBSP apple cider vinegar

  • 1/4 cup freeze-dried raspberries, crushed (plus more for decorating). (Don't substitute with fresh or frozen raspberries).

Chocolate Glaze

  • 1/4 cup coconut oil, melted

  • 2 TBSP maple syrup, room temperature or warmed

  • 1/4 cup + 2 tbsp cacao powder or carbo powder

  • pinch of sea salt

Instructions

  1. Preheat oven to 350F and grease a donut pan with a little bit of olive, avocado or coconut oil. Do this even if you have a non-stick pan.

  2. Add carob or cacao powder, cassava flour, coconut sugar, baking soda, cream of tartar, and sea salt in a big bowl. Stir to combine.

  3. In a separate bowl combine melted coconut butter, applesauce, vanilla extract, and olive oil.

  4. Make a well in the center of the dry ingredients and fold in the liquid ingredients.

  5. Gently fold in the apple cider vinegar. The consistency of the batter should become a lot lighter.

  6. Fold in the crushed freeze-dried raspberries

  7. Scoop 2-3 TBSP of batter into each donut cavity and use your hands to press the batter together.

  8. Bake your donuts as soon as you mix the wet and dry ingredients together. Bake in the middle rack of the oven for 9-11 minutes (maybe a bit longer if using a bigger pan).

  9. Allow the donuts to cool at least 10 minutes in the pan, and then use a knife to loosen the edges of the donuts. Then, flip the donut pan over onto a cooling rack to remove the donuts. Allow them to cool completely before glazing.

  10. As the donuts bake, prepare the glaze. In a large bowl combine melted coconut oil, room temperature or warmed maple syrup, cacao powder, and a pinch of sea salt and whisk to combine.

  11. Once the donuts have cooled completely, dip each donut into the glaze. Immediately sprinkle crushed freeze-dried raspberries onto the glaze!

We were baking one day when our friend Rachna Rawat from Hanuman Chai stopped by and offered us a delicious Indian scramble to try. We were surprised when we learned that it was vegan and made with tofu. Oh so good and simple to make! Goes perfectly with some Hävenly Rustic toast. Rachna kindly shared her recipe and we picked up some organic tofu that day from Nude Foods Market. Check out the recipe below for a yummy dinner in 15 minutes! Rachna's Indian Tofu Scramble!

Ingredients
4 cups tofu
1 small onion diced
1 small red bell pepper diced (optional)
1 tsp turmeric
1 tsp cumin (we used both ground cumin and cumin seeds)
Corn
Peas
(Any other veggies you have at home!)
Salt and pepper to taste

Instructions
1. Squeeze out as much water as you can from the tofu. There are lots of ways to do this. As we were in a time crunch we simply put the tofu in a colander, covered it with paper towel and pressed.

2. Sauté the diced onion in some ghee or oil for about five minutes. Add some extra ghee/oil and sauté the turmeric and cumin for 10-15 seconds. Be careful to stir so that the spices don't burn.

3. Sauté the bell pepper.

4. Crumble the tofu and add that together with peas and corn. Stir for a few minutes. Salt and pepper to taste. Serve warm!

Glazed goat cheese toast - a delicious quick meal when life feels overwhelming.

Sometimes life can feel a bit overwhelming. While we count our lucky stars to have returned to our home, the devastation of the Marshall fire makes us feel helpless, heartbroken for all the victims, and worried about the well-being of our planet. So, when life can feel a bit much and you don't want to cook, it can be nice to turn to a really simple, yet yummy meal. Please check out the recipe below for a warm glazed goat cheese toast!

Marshall fire victims - please come for a nurturing Wednesday soup lunch. Together with South Street Market, we welcome fire victims to a vegan and gluten-free soup lunch tomorrow, Wednesday starting at 11 am while supplies last. We'd also like to thank Outrageous Baking and Green Tahini for their donations.

Glazed Goat Cheese Toast on Hävenly's Rustic Bread

Ingredients
Hävenly's Rustic Loaf or Boule
Goat Cheese
Basil (fresh or dried)
Honey
Olive oil
Walnuts (optional)
Sundried tomatoes (optional)

Instructions
1. Preheat oven to about 450F

2. Slice your Rustic Loaf, spread some butter on it, and a rich layer of goat cheese. Spread some walnuts and sundried tomatoes on top. Drizzle with honey. Sprinkle with basil. Drizzle some olive oil on the nuts.

3. Bake for about 10 minutes until the cheese looks nice and a bit melted.

Enjoy with some salad of your choice!

Sadness and Celebration + Free Wednesday Soup Lunches for those affected by the fires 🔥💗

We were with family in Florida celebrating our daughter Naomi's 10th birthday when the news of the devastating Marshall fire hit us full force. So many lost everything in so little time. As days go by, we learn of more and more victims. Our daughter's student teacher, several women in my Swedish meet-up group, families from my Thai boxing community... The devastation is incomprehensible and this is at a time when Omicrome is raging through the country. While feeling fear and pain, we also feel immense gratitude that we have such a strong community, that we are alive and healthy, and that we have birthdays to celebrate.

In collaboration with our friends at South Street Market in Louisville, we’d like to invite those affected by the fires to nurturing soup lunches including Hävenly's bread on Wednesdays throughout January. The soup lunches will be served each Wednesday from 11 am (until we run out) and the address is 824 South St, Louisville. All you have to do is let someone from South Street Market know that you would like the free soup lunch mentioned in this email.

We are currently trying to get back to Colorado as flight after flight gets canceled. As soon as we do make it back, we will help collect items for those who lost their homes. Stay tuned for those efforts. Please let us know if you have other ideas as how we can help.

On a longer term, Hävenly will continue to work on reducing its environmental footprint and are grateful to be part of Boulder County Food & Beverage Pollution-Reduced Packaging Pilot. The pilot provides much-needed support in evaluating sustainable packaging options for Hävenly's baked goods and bread mixes, and it connects us with other food manufacturers that share our zero waste mission.

🎄Time to make your own "glögg" (Swedish mulled wine) + Holiday orders! 🎄

The holiday season is approaching so fast and we are grateful for each and every one of our wonderful customers. Many thanks to all who stopped by at Fjällräven last weekend for some glögg and fika. For you who missed the glögg-event, please check out the glögg recipe below to make your own delicious fragrant Swedish mulled wine.

As for this week, you can place your Hävenly order as usual by 6 pm tomorrow (Thursday) with pick-up at Savory Spice this Friday.

Our bake-at-home bread mixes make excellent holiday gifts (or just treat yourself to the smell of fresh-baked bread!). Please be sure to order your Morning Oat Bread Mix and Rustic Bread Mix for shipping by the end of this week to ensure proper delivery before the holidays! Any holiday orders for local pick-up need to be placed by Tuesday, December 21 for pick up at Savory Spice on Thursday, December 23. We will continue to bake throughout the end of the year but will take the last Fridays of the year off. Therefore next week is the last week for special orders for this year. You can of course continue to pick up our products at Black Cat Farmstand, Cheese Importers, Cured, Nude Foods Market, and South Street Market.

SWEDISH GlöGG RECIPE

As a child, I loved glögg served with almonds, raisins, and pepparkakor and being a December child, I always associated it with my birthday and Santa Lucia. As I got older, I did enjoy the grown-up version of glögg - still served with raisins and blanched almonds - and there were lots of different types one could get at Systembolaget. Only when I moved to the US did I start to make it myself, and I enjoy this recipe by Chef Marcus Samuelson as published by Bon Appétit. If you have a favorite glögg recipe, I'd love to hear from you!

If you'd like to serve your kids some glögg you can pick up glögg at World Market and simply mix it with hot water (if you are in a rush and want to make an adult beverage, mix it with red wine).

Ingredients (make about 1 1/2 quarts)

2 cinnamon sticks, broken into pieces
1 tsp. cardamom pods
1 small piece ginger, peeled
Zest of ½ organic orange
6 whole cloves
½ cup vodka
1 750-ml bottle dry red wine
1 cup ruby port or Madeira
1 cup granulated sugar
1 Tbsp. vanilla sugar
½ cup blanched almonds (I prefer to cut up the almonds, but you can serve them whole)
½ cup dark raisins

Preparation

Step 1

Crush cinnamon and cardamom in a mortar and pestle (or put them on a cutting board and crush with the bottom of a heavy pot.) Transfer to a small glass jar and add ginger, orange zest, cloves, and vodka. Let sit for 1 day.

Step 2

Strain vodka through a fine-mesh sieve into a large saucepan; discard spices. Add wine, port, granulated sugar, vanilla sugar, almonds, and raisins and heat over medium just until bubbles start to form around the edges.

Step 3

Ladle glögg into small mugs, with a few almonds and raisins in each one. Keep any remaining glögg warm over very low heat until ready to serve (do not let it boil unless you want it kid-friendly).
