Dinner in 15 minutes? Try this vegan Indian scramble! So yummy! ⏳ Inbox

We were baking one day when our friend Rachna Rawat from Hanuman Chai stopped by and offered us a delicious Indian scramble to try. We were surprised when we learned that it was vegan and made with tofu. Oh so good and simple to make! Goes perfectly with some Hävenly Rustic toast. Rachna kindly shared her recipe and we picked up some organic tofu that day from Nude Foods Market. Check out the recipe below for a yummy dinner in 15 minutes! (Do you have any quick, easy and healthy recipes to share? We'd love to hear from you!)

Rachna's Indian Tofu Scramble!

Ingredients
4 cups tofu
1 small onion diced
1 small red bell pepper diced (optional)
1 tsp turmeric
1 tsp cumin (we used both ground cumin and cumin seeds)
Corn
Peas
(Any other veggies you have at home!)
Salt and pepper to taste

Instructions
1. Squeeze out as much water as you can from the tofu. There are lots of ways to do this. As we were in a time crunch we simply put the tofu in a colander, covered it with paper towel and pressed.

2. Sauté the diced onion in some ghee or oil for about five minutes. Add some extra ghee/oil and sauté the turmeric and cumin for 10-15 seconds. Be careful to stir so that the spices don't burn.

3. Sauté the bell pepper.

4. Crumble the tofu and add that together with peas and corn. Stir for a few minutes. Salt and pepper to taste. Serve warm!

Enjoy with Hävenly's Rustic toast, some salad of your choice, or asparagus!
