Nut Bread from the Bronze Museum (Keto friendly)

This summer we visited the rock carvings in Tanum, a Unesco World Heritage site. We walked among the hundreds of rock carvings (some estimated to be 4000 years old), explored the reconstructed Bronze village and enjoyed a fabulous meal at Café Bronze. We loved the salmon toast and the cafe kindly shared the recipe of their Nut Bread!
You can easily tweak it to make it Keto-friendly by replacing almonds with walnuts. Allergic to sesame seeds? Try using flax seeds instead. Let us know how the baking goes!
Café Bronze Nut Bread Recipe
Heat oven to 325F (160C)
Ingredients
200g almonds (or walnuts) coarsely ground
200g pumpkin seeds
100g sesame seeds (or flax seeds)
Handful of walnuts (optional)
0.5-1tsp salt
5 eggs
0.5 cup olive oil
Instructions
Mix ground almonds, seeds, walnuts and salt in a bowl.
Whip eggs and oil in a separate bowl. Mix in the nut mix.
Oil a smaller non-stick loaf pan (about 9"x5") and coat it with some almond flour or with sesame seeds. Pour in the batter.
Bake 1 hour
