Tomato Basil Bruschetta Recipe
Tomatoes are ripe and delicious and this is the perfect time for an easy summer meal!
Ingredients (4 servings)
4-7 ripe tomatoes (the best you can find!)
a handful of fresh basil leaves
1-2 garlic cloves
1/4 white onion (optional)
your favorite thick balsamic vinegar (mine is Napa Valley Grand Reserva)
olive oil
HĂ€venly's Rustic bread (either toasted or grilled)
Instructions
1. Cut tomatoes into small pieces. Add salt and pepper to taste. Drain excess juice.
2. Cut white onion into fine pieces. Add to tomatoes. This step is optional.
2. Cut basil leaves and add to tomatoes together with some olive oil and balsamic vinegar.
3. Toast your HĂ€venly Rustic bread until crispy then brush with olive oil (alternatively brush both sides with olive oil and toast in the oven at 450F, or grill if you prefer a smoky flavor).
4. Serve promptly! You can make the tomato mixture up to two days in advance, but you don't want to assemble your bruschetta until you are ready to sit and eat. Drizzle your favorite thick balsamic vinegar over.
