We just arrived in Sweden and surprised my sister on her birthday. What a true joy it is to be with family. Yesterday, we celebrated the 8th night of Hanukkah, and on Wednesday, we will all gather to celebrate Christmas "the Swedish way".  I brought my sister, who is also gluten-free,  some Hävenly baked goods as well as some homemade Swedish Gingerbread cookies "pepparkakor". She couldn't believe that the Gingerbread cookies were gluten-free and Paleo-friendly!  She asked me for the recipe, and I thought I'd share it with you as well.
